Mid-Week Chicken Leg Quarters Recipe
The perfect Mid-Week Chicken Recipe:
- 1kg Chicken Leg Quarters
- 30g Butter (Softened)
- Mixed fresh herbs chopped finely (Recommend Parsley, Rosemary and, Thyme)
- 1 Garlic Clove (chopped)
- Dash of Olive Oil
- Spice for Chicken
- Salt
- Pepper
Instructions:
- Leave chicken out to thaw
- Pre-heat oven to 180
- Mix butter, fresh herbs, and garlic clove together.
- Gently separate chicken skin from chicken meat.
- Take clumps of butter-herb mixture and stuff under the chicken’s skin.
- Once all the butter is stuffed, lightly sprinkle olive oil over leg quarters.
- Sprinkle a small amount of spice for chicken over with salt and pepper.
- Cover chicken with foil.
- Cook for 45 minutes. Thereafter, remove foil and cook a further 10-15 minutes.
This meal can be served with your choice of sides. We recommend some roast potatoes and salad!
